Tapioca gnocchi

Ingredients – Serves 3

Tapioca / Maravalli kizhangu – 1 big (1¼ cups mashed)

Rice flour / Arisi maavu – ¼ cup

Water – ½ cup

Water – ½ cup

Fine salt – ½ + ¼ tsp

Crystal salt – 1/8 tsp

Unsalted butter – 1 tsp + 1 tbsp

Onion – ½ cup (chopped)

Garlic – 1 tsp (crushed)

Carrots – ½ cup (chopped)

Green bell pepper / Capsicum – ½ cup (chopped)

Dried Italian mixed herbs – 1 tbsp

Dried red chili flakes – 1 tsp (as per spice level)

Black olives – 5 to 6 (pitted)

Preparation

Cut the tapioca roughly into 3 pieces.

Fill the pressure cooker with enough water to immerse the tapioca.

Pressure cook for 3 whistles or until perfectly cooked through.

Turn off the stove and once steam subsides, remove the valve and open the lid.

Drain the water and peel the skin off the tapioca.

Mash the cooked tapioca to a smooth paste. Add ½ teaspoon of fine salt to the paste and mix well to incorporate.

Heat a wide cooking vessel with ½ cup water.  Add 1/8th teaspoon crystal salt and bring the water to a rolling boil.

Reduce the flame to low and add the rice flour.

Stir vigorously as you add the flour to avoid any lumps. Stir well to a lump free roux.

Add the mashed tapioca paste and mix well.

Turn off the stove and bring together the paste to a dough.

Let the dough rest covered for 30 minutes.

After 30 minutes, pinch a thumb sized balls and roll into cylindrical balls.

Roll the cylinders against the tines of the fork to create gnocchi patterns.

Roll everything until the dough is finished.

Heat a sauce pan with a liter of water. Bring it to a rolling boil.

Reduce the flame to low and add the rolled gnocchi.

Cook for less than a minute or until everything floats on the top.

Strain the cooked gnocchi and run through the cold water to avoid further cooking.

Heat a sauce pan with unsalted butter.

Add chopped onions and crushed garlic. Sauté till onions turn translucent.

Add chopped carrots, green bell peppers, mixed Italian herbs, red chilli flakes and ¼ teaspoon of fine salt.

Sauté on slow flame till veggies are cooked.

Add the cooked gnocchi and mix well.

Turn off the stove.

Serve stir fried veggies loaded gnocchi.
